this cake is feminine and romantic. it's chocolate and tea. sweet and earthy. it's a rainy day cake. make this cake for your momma, or your sister, or your sweet friend who has heard you whine for the last seven years. make it for your co-workers. make it for everyone you love, but make sure you save a piece for yourself.
earl grey chocolate cake.
very slightly adapted from shutterbean
6 earl grey tea bags
1 cup water
1/2 cup (1 stick) butter
3 eggs
2 cups sugar
4 ounces unsweetened chocolate, melted and cooled
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup vanilla greek yogurt mixed with a splash of milk to thin it out
powdered sugar
heat oven to 350 degrees. coat a bundt pan with baker's joy cooking spray.
brew tea in the water for 3 to 5 minutes. remove the tea bags and set brewed tea aside.
in a stand mixer beat butter, eggs, and granulated sugar until fluffy. blend in the chocolate. beat in the flour, baking soda, baking powder, salt, yogurt. slowly drizzle in the brewed tea being careful not to slosh (yes, i said slosh) batter everywhere on the floor (like i may or may not have done...twice)
pour into pan and bake 50 minutes or until a toothpick inserted into the cake comes out with a few crumbs. remove from oven and let stand 5 minutes before removing cake from pan.
dust with powdered sugar.
